Back to School Dinner Rescue: Flank Steak Marinade

School is almost back in session and sports are starting for the fall. Dinnertime will be getting hectic and healthy meals can sometimes end up being a low priority. What do you do for health-conscious dinner when you have a long to-do list, tight schedule and everyone keeps asking, "What's for dinner?" 

Chef Michele Wieser, a personal chef in Dublin, says a marinated flank steak is easy, versatile and most importantly for back to school schedules, quick to cook. Chef Shell demonstrates an easy marinade that will give steak a flavor punch. The steak can also be used on a salad, according to Chef Shell.

Flank Steak Marinade
  • 1/4 cup of soy sauce 
  • 1 tablespoon fresh ginger, minced
  • 1/4 cup of olive oil
  • 3 tablespoons white or red vinegar
  • 3 tablespoons honey
  • diced green onion or shallot
  • 3 cloves of garlic, minced
Mix all ingredients together. Put steak in a plastic container or plastic freezer bag. Pour the marinade over the steak and refrigerate at least four hours or overnight. Discard the marinade. Grill for seven to ten minutes. Slice against the grain and enjoy.
