Chef Shell the Dinner Belle: Fast Holiday Breakfast Idea

Dublin's Chef Shell shows how to make quick, easy egg cups for an on-the-go healthful breakfast.

Certified personal chef and a mother, Michele Wieser, best known around town as as "Chef Shell the Dinner Belle,"  is back with a quick and simple breakfast recipe that can be adjusted based on what you have in your fridge or what your children prefer.

Chef Shell says the egg cups are a big hit because they are portable, nutricious and fast and can be made-to-order. According to Chef Shell, they are great to have on hand if you have company visiting for the holidays as you can freeze them or keep them in the fridge and reheat them when you are ready to eat.

Healthy and Delicious Egg Cups:  

10-12 eggs

1 green onion

8 slices of turkey bacon chopped (or meat of your choice)

1 cup of roasted diced red and yellow bell peppers

2 small zucchini squash chopped

1 cup of chopped fresh spinach diced small

Salt and pepper to taste  

Preheat oven to 350 degrees.

Put foil in muffin cups or spray with non-stick spray. Whisk all eggs in bowl, add veggies and meat, stir to combine. Using a measuring cup, fill muffin pans with 1/4 cup each. Bake them for 20-25 minutes or until they are set in the middle.   You can refrigerate or freeze them for an easy breakfast or snack!
